Mike and I are leaving for Utah today!!! I'm so excited to see snow and our families I woke up early cause I couldn't sleep anymore. It was like Christmas came a day early this year.

We opened our presents from my parents last night and I got so many books!!! I love it! The Complete Collection of Hans Christian Andersen Fairy Tales and a Betty Crocker Slow Cooker cook book were among them. Not to mention two baby books. I think my mom couldn't help herself:)

Pumpkin Head's arms are now proportional to it's body and it created it's finger prints this week. Finger prints are unique to each person because as baby moves around in the amniotic fluid wrinkles are formed on the finger tips. So not even twins have the same prints cause when baby forms the finger tips are smooth. Cool Aye?

CHRISTMAS MIRACLE!!!!

I'm coming home for Christmas!!! My Prayers have been answered!!!! We're flying out, separately, on Christmas Eve. Everyone pray that our flights don't get delayed or canceled!!!! Oh that would be awful. I'm going to be in Payson for probably 3 days and then at the cabin in Fish Lake for 3 days:) Happiness!!!!

Side Note: We gave our friends a ride to the airport, a mere 30 minute drive, and for our efforts they gave us a Turkey:) I was planning on cooking it Christmas so it's been defrosting in the fridge for 3 days. Now we won't be here so when I get home from work on Wednesday I have to bake a Turkey. We will eat some for dinner and lunch the next day then I don't know what to do with it.

Mike and I have been released from Nursery:( We were only assigned to the first half of the two hours which meant I still got to go to Relief Society which was awesome. We are now going to be working with the Sunbeam A class. So we will get some of the kids we've had these passed 4 months in Nursery. Sad part is I can no longer go to Relief Society and Mike will no longer be getting candy in Elders Quorum.......But now we get to go to sharing time!!!!!! I'm a little excited about that part. I get to sing Primary songs:)

NC

So today it snowed in Durham. Much to my joy and happiness there were big fat flakes and it's supposed to snow through the night. But, Durham people are funny about snow. They love to freak out about it like they may die on the way home!! People keep telling me "we're not used to snow." " We don't have snow plows." "I hate ice." And while all this is very true I still think they're all being weirdies. One person said to another today, "Did you see they salted and sanded the highways today?", "I know I can't believe they did that." .........Weirdies. Not only that but all the gallon water jugs were sold out at the stores last night and everyone was shopping in anticipation for not leaving the house the entire weekend. Schools got out 2 1/2 hours early today and most people wouldn't come to work or left early.......weirdies.

Key Change: I got a gift card for $15 from work today for Harris Teater which is kinda like a Harmon's Grocery Store. So Mike and I went and bought enough crab to stuff ourselves and it was awesome!!!!!! And Good!!!!

Phew.......

Good news. Pumpkin head's intestines are now inside it's body so we can all stop panicking. Other facts: It's now almost 3 inches long and can suck it's thumb if it wants to but I hope it doesn't.

I can't wait to find out what Pumpkin Head is cause who wants to be called an it? The strange thing about this is I refer to all my nieces and nephews as "it's" till they can talk. Not in a mean "whats wrong with it" kind of way. Just a "can I hold it? Or Feed it?" kind of way.

Mike and I agree that I need to start showing soon cause I look chubby:)

Tis the Season!

I got in trouble several times the past week from Anneli for not posting so here it is. Christmas! Mike and I splurged and got a tree and all the fun that goes with it. I love it!!! And to my eternal joy so does Mike:) He is now done with finals and living care free...until grades come out but he's very confident that he did well. Now he plays World of Warcraft and Settlers of Cauton. I don't think that's how it's spelled but I did my best. Mike's been getting after me for my bad spelling. I'd rather sound something out and try to spell it instead of using spell check or looking it up on Dictionary.com.....okay I used spell check this time but left some things miss spelled on principle.

Pumpkin Head is 2 1/2 inches long and part of its intestines are in the umbilical cord...something to think about. I get sick more often now and I can pretty much gag on cue. I'm quite talented. I'm finding it harder to want to clean my house after work when I'm not feeling well so needless to say it's starting to look a little scary around here. Then when I do clean it's messy the next day. Oh the cycle:)

I super glued an earring to my earlobe yesterday on accident but luckily got it off. I peeled glue from my ear for the rest of the day.

I put in for a week off in the end of February so that I can come home and see the snow!!!!! Everyone pray that I get the time off please.

Also, my awesome sister in law is part of a mass Christmas card sending to a special family. Here is the info:

There is a 8-year old from my Primary in Toledo that is dying of squamous cell sarcoma. He has only about 2-3 months left, and since he loves Christmas, his Primary teacher is working on getting him and his family showered in Christmas cards and well wishes this holiday season. I finally did it

Last night I was standing at the kitchen sink about to get a drink of water when all the sudden it hit me.......gag.....I'm going to through up. So I run across the apt with my hand over my mouth and puked hooten ann (a baked type pancake). Not so fun but nothing like puking when your sick. I rinsed out my mouth and went about the business of getting ready for bed. Not to bad.

P.S. Mike's flag football team won their division-the Graduate teams, and then over all-the winners of the Under-Grad teams. Nice. Thats 2 t-shirts in one year.

Details

The gummy bear (it's approximate size) is tentatively due on June 20. I get emails from a baby web site weekly telling me it's size and what it and me are doing that week. First it was a twinkle then a sesame seed, a cupcake sprinkle then a tic tac. Now it is a Gummy bear. Apparently the website want's me to eventually eat it.

STUPENDOUS!!!

HE SHAVED!!! Oh my man is so hot now! I'm just going to say that out loud to the whole world. I CAN SEE MY MANS FACE AND I LIKE IT!!!!

Also, today was my first day of training at the American Red Cross and I pretty much rocked at it. I only did health histories which made my neck ache but was not so bad.

Tonight's menu is vegetarian Chimichangas.

There's no place like home......anywhere

I've finished my training in Charlotte till December!! I've been there for 3 weeks!! I came home on Fridays and left on Sunday afternoons so it really seemed like I was up there constantly. We would sit in a room reading or listen to someone read from the policy/procedure manual verbatim.......sometimes when I would walk in the room in the mornings I would feel sick to my stomach that I was there again. BUT I'M DONE!!!!!!!

I love being home!! I love sitting on my couchless floor and playing on my broken laptop and listening to Mike play computer games! He lived on Life cereal and salsa...and a few other things.

We bought a light at IKEA today.....bliss.

Halloween

For some reason unknown to me these pics didn't turn out great. Mike and I were birds this year. You can't really tell but those are masks that I pasted beaks and feathers to. We sprayed Mike's hair up and back. It was so BIG!!! I should have taking pics of it cause it was an awesome sight to behold. When he wasn't wearing the mask he looked like a wolf man:)

YUMMY!!

I tried both of these at a cooking club and they were amazing!!Summer Strawberry Soup

by Natalie Pelfrey

2 c vanilla yogurt
1/2 c orange juice
2 lbs. fresh strawberries, halved (8 cups)
1/2 c sugar

In a blender, combine the yogurt, orange juice, strawberries and sugar in batches; cover and process until blended. Refrigerate for at least 2 hours

Southwestern Pumpkin Soup

3 cups chicken stock
1 cup whipping cream
1 15-ounce can pure pumpkin
3 tablespoon packed brown sugar
1 teaspoon ground cumin
1/2 teaspoon chilli powder
1/2 teaspoon ground coriander
1/8 teaspoon ground nutmeg
3/4 cup (packed) grated cheddar cheese
Chopped fresh cilantro

Bring chicken stock and whipping cream to boil in heavy medium pot. Whisk in canned pumpkin, brown sugar, cumin, chilli powder, coriander and nutmeg. Reduce heat to medium and simmer until soup thickens slightly and flavours blend, about 15 minutes. Season to taste with salt and pepper. (Soup can be prepared up to 1 day ahead. Cool. Cover and refrigerate. Rewarm over low-medium heat, whisking occasionally.) Ladle soup into bowls. Garnish each with cheddar cheese and cilantro and serve

My Trip

Mom surprised me Saturday morning during Conference by buying me a ticket to Utah so I could visit while my Grandpa was in town. Awesome!!!!! I'm sorry I couldn't see you all while I was there! I was only there for a week and was busy pretty much the whole time. But here are some highlights.

Note: I was trying to get candid photos of people which just means I didn't get anyone's faces:)

I love the beginning of a new month. Many things happen at the beginning of the month like news letters, blog updates, calender changes and my very favorite-a brand new budget! The date changes from the 31st to the 1st and BAM I have money again. Then within an hour or so the can of diced green chili's and bottle of honey are being bullied around by the large amount of groceries I was able to buy with my brand spankin new money! So, because the month has just begun we are now eating food again.

p.s. there are squirrels in our ceiling and their noisy.

I'm officially employed. I signed and sent back the Offer of Employment to the Red Cross and my first day is October 13. I'll have a week or two of orientation at the Durham Office which is conveniently right across the street and then have a 3 week training course in Charlotte. It's about 2 1/2 hours away so their putting me up in a hotel and I'll come home on the weekends:)

The Duke Sleep Out

Here are some highlights of the Duke Sleep out. For those of you who don't know what that is I will explain. To give you an idea of the size of the Duke basketball arena the Marriot Center holds 23,000 people where as the Duke Stadium holds 9,000. The basketball players are celebrities, the coach is a God and all the fans are called Duke Crazies. Why you ask? The fans at the games are nuts!! They yell, cheer, jeer, cat call and stand the whole time. No one goes to the concession's, you don't leave to pee and if you sit down you might die! Therefore, the tickets to the games are hot and hard to get. So, because so many of the students want tickets they hold a lottery. For 29 hours the students camp out on school grounds and every so often a siren blares (also in the middle of the night) signaling the hoard of students to come check in. Sometimes there's a couple of hours in between, sometimes there's only 20 minutes in between calls and the lines are massive. You're only allowed to miss 1 check in, you miss 2 and you're out. Mike got a ticket:)

The air mattress was ours. He didn't know the tent didn't come to NC with us so under the stars he went.

Tent city! This isn't even close to showing how many people camped out. On the Hill lots of people stays in the back of Uhauls.

Free food? Yes ma'am. Mike took this picture while we were getting free burgers. The tent in the back ground is the check in tent and all those people are waiting their turn. Mikey was always fast. When the siren went off every person there ran full speed to the tent. It was nuts.

Mmmmmm...sweat. It was oober hot that day. I glisteneth.

Mikey and I love to dance!!!!!!!!!!! We really need to do this more often.

The freshman balla's (boy speech for basketball players) came to be introduced and everyone went crazy. When Coach K was talking everyone was pin dropping quite.

At just before midnight our friend Jared Ashworth (on the right) won the Guitar Hero competition with the largest score I've ever seen!

Lots of fun all around. Afterwards they had 3 check ins back to back. CRAZY!

I love today!

It's a little bit pathetic how excited I was getting on the blog today and finding that 6 people updated their blogs in the last 24 hours. I love it!!!!!!!! There were picture's and funny stories. It was like Christmas came before Halloween this year which doesn't happen often.

I like oatmeal. This may not seem interesting to any of you but my mom would be surprised. I hated oatmeal growing up and refused to eat it. The texture was nasty and it was gooey and all sorts of yuck. On the Matrix when they compare their nutritionally sound meal to a bowl of liquid snot I always assumed they were talking about oatmeal. But last night as penance for eating all the Sun chips at lunch I had apple cinnamon oatmeal for dinner. To my amazement it wasn't that bad. Now I'll have to come up with something else for penance but that's okay cause my breakfast needs can now be met with oatmeal!

So The Red Cross offered me a job. I tentatively excepted it but I'm still waiting to hear from UNC Healthcare. UNC pays a bit better but I think it's time for me to get out of chronic care. And with Mike having late hours at school and me having latish hours at Red Cross I won't be spending my free time pining at home:)

Bad news. I most likely won't be able to come home for Christmas. I may be able to come in early Dec. or in Jan. But I'm the lowest on the totem pole no matter where I work so I just see it happening at this point. Sorry gang.

On the bright side we'll be able to pay our bills!!! I think that is a cause for celebration on many many levels.

I made the apt smell like Christmas today:)
I don't know if any of you remember a short film with Roger Rabbit called Tummy Trouble but I thought of it when I was watching Who Framed Roger Rabbit last night. I just watched it and I don't remember it being this funny but now it is! So here it is for your viewing Pleasure.

Also one of my other fave's is For the Birds. It was shown before Monster's Inc. in theaters. Amanda and I laugh about this one all the time. Enjoy!

I went to pick up a bag of miscellaneous bathroom stuff from this nicey girl named Holly and when I go there she also gave me some tan flannel sheets for our bed and this!! A stainless steel H.T. Traders wok. It came with a glass lid and a large steeming tray. SO AWESOME!!!!!!!

Continuing the Countdown!

Ladies and Gents it is now 100 days till CHRISTMAS!!!!!!!!!!!!!! In honor of this special calendar day I have found a girl of unparalleled talent to sing one of my favorite CHRISTMAS songs.



Side note: I like a good portion of whats on the music seen right now. At least when Mike is listening to something new I generally like it. But. And this is a big But. I have noticed an overall lacking of anything to sing along to. You know that, "I love this song and I can't help but sing out loud in my car at a stop light even though people will stare and think I'm odd." kind of songs. Where's the Celine Dion's? And the Faith Hill's? And anyone else for that matter? The only people who are keeping the good Ballad sing along songs alive is Sugarland and Kerrie Underwood and their both country singers for crying out loud!! I can't listen to them everyday! So until the sing along comes back I will have to make due with Heart's 80's hits, Faith Hill oldies and the occasional Barbara Str.........I can't spell that but you know who it is!

FREE!!!

The Craigslist Free section is so awesome!! So far we got Mike's desk and chair, and an entire car load of fabric and patterns for me to play with. Now we have a a 4 1/2 by 3 1/2 foot mirror for our living room. It's been painted forrest green but I can easily fix that. And a ladies desk for my sewing machine and crafts! The guy we got it from has already primed it I just have to get the paint! AWESOME!!!!!!!!!!

Stake Women's Day

Was So Awesome! I took classes on Anxiety in Children, Farmer's Market How to's, and Mormons and Muslims. Each class was an hour long but each could have easily gone way over and I wouldn't have been sad at all. They were so cool! We had a Psychologist come and teach us how to recognize child anxiety and what could be done about it. I was surprised by how many of the women in the stake had kids with diagnosed anxiety problems.

The Farmer's Market class was great. This sister told us the best farmer's markets in the area and what places offered the best apples or cabbage or whatever. She explained about bottling and drying and food storage which might sound boring but she did it in such a good way! All the kids used to help Mom and Greg bottle peaches, beans, apricots and such so some of it wasn't knew to me but then again I know nothing. I will say that she kinda just through her corn in the bag and let it sit all lumpy in her freezer. We always had to lay in perfectly flat so it was organized and more fit in the freezer but I won't hold her lumpy corn bags against her.

The Muslims and Mormons class was interesting and sometimes I was a little uncomfortable. The sister who taught it was a convert to the church and had been a Muslim till she was 15. Her main objective was to give us a clearer understanding of what they believe and dispel any previous views that were incorrect. She did super well and was strait forward.

I really liked it! Best part is they do this every year with different classes. :)

A Yummy Side Dish

I made this tonight with Chicken and Mike liked it lots which made my soul fill with joy. The thing I like about this dish is it's simple, cheap and clean. You can taste the tomatoes but the vinegar and Olive oil give it some zing.

Did you know that Extra Virgin Olive Oil comes from the first pressing of the olives. It has more flavor and that's why so many good recipes ask for it. Some of the flavor is cook out when you use it in the pan so keep your really good or expensive stuff for drizzling or for bread dipping.

Tomatoe Salad
4 fatty tomatoes (I call them that cause they're big, juicy and red but they weren't beefsteaks)
cut into 6ths
3-4 Tbsp Extra Virgin Olive Oil
3 tsp Apple Cider Vinegar
1 1/2 tsp dried Basil
coarse salt

Method: Mix Vinegar, Oil, Basil in bowl. Add tomatoes and salt to taste. Enjoy:)

Bonuses for younger siblings

Some of you may have heard me say this before, but the best bonus of having siblings that were teens during the 80's is that I got to partake of the most awesomest of all music era's. I discovered today that you simply can't be blue while playing 80's pop. Doctor's should start prescribing regular doses of the 80's for all their depression patients. I mean honestly who can keep themselves from happily singing along to Erasure's Hungry like a Wolf?

Changing notes: I got an entire car load of fabrics and patterns from the free list on craigslist. I'm so excited!!!! I'll be busy until I can find a job and even then I'll still be a Sewing Machine! Ha That was punny! However, I was so thankful that my prayers had been answered that I tried to bare my testimony about it at church and instead cried so hard all my sentences ended on a very high pitch squeal. It was so bad it's now in my top 5 most embarrassing moments. I was however very popular for the rest of church when all I really wanted was to crawl under a rock and hide!!!!!!!!!!!!

Everyday Briliance

Save the plastic cups from single serve pudding's. Fill them half way with low-fat fruit yogurt from a bulk yogurt source and freeze them for a yummy, cool, healthy treat.

Also, buy fruit thats on verge of being over ripe (it's usually discounted), cut them up into small pieces and freeze them in single flat layers for another yummy, cool, healthy treat.

A few things

I have made a best friend!! She's really nice and she thinks I'm funny and we really like hanging out!........she's also 7 months old and her name is Jane Black. I picked her to be my best friend cause she has a comb over that looks nice in a barret.

Also, I waited 4 hours to take the driving test at the DMV and failed it.....The questions about the drivers license point system put me over the edge. It was a 25 question test and you can only miss 5. I made myself feel better by eating a bag of barbecue chips then when I went to girls night out I drank a whole diet coke and a cream cheese (thats to say I ate it and didn't drink it) danish and I have to say today I feel alot better:)

I did Pilots today (amanda talk for pilates) and cardio! That means I don't have to work out for the rest of the week.

We bought a scooter. We call it yip yip.

Yummy Treats!

Yesterday I made a Bread Pudding for a dinner invitation and I had oodles and gobs of Butterscotch Sauce left over which was not a bad thing. Using my amazing enginuity I quartered the recipe and made a microwavable single serving. Amazing!!!!!!

Bread Pudding
1 tsp. Vanilla Extract
1/4 Tbsp. Butter
1/4 C. Half-n-Half or Milk
1/4 C. Sugar
1 Egg
2 Pieces Bread, Torn apart

Method: Melt Butter in small 4 C. microwave safe dish. Mix Egg, Vanilla and Sugar in seperate dish. Add Milk to mixture. Add Bread stirring softly till Breads coated. Poar into dish with Butter. Microwave till knife pierced in center comes out clean. About 2 min 40 secs.

It's sweet enough that you can eat it with or with out Butter Scotch Sauce.

The search is over....

I have been rehired by Davita. I'm very grateful that we will have an income!! Let the furniture buying commence. The clinic is very different from what I'm used to so I think tomorrow morning will be interesting. I will let you know how it turns out. I am getting a dollar pay raise awesome and words can't discribe the fluffy feelings I have for Benefits. I can go to the dentist!!!

The Smile

I was wondering around on youtube again today when I found this video clip that Ashley Hone and I used to watch over and over again in high school and we called it "the smile". It's about half way through the clip when a boy and girl sing a love song. Part way through the guy gives this great smile, hence the name.

We loved it!!!! Being the swoony teenagers we were it was bedazzling! This is for you Ash!

the Holiday Season approaches!

Mark your calendars people we have 76 days till Halloween, 102 days till Thanksgiving, and 131 days till Christmas!! Start crafting and shopping for my presents now or you might get behind!!! PANIC PANIC!

One more thing. Did you know you can make home made microwave popcorn? I learned this from my sister-in-law Emily then did some research on google about it.

Step 1- Pour 1 quarter cup air pop popcorn in a paper lunch bag.

Step 2- If desired pour 1 Tbsp. olive oil in bag and salt to taste (you do not have to do this before poping, you may do it after or not at all. Oil is not necasary for poping).

Step 3- push air out of bag and fold down a couple of times (you can also fold once and put one staple in it. It will not spark but you still have to push out the air).

Step 4- Place in microwave and cook till 3-4 seconds lapses between pops.

Serve. It's yummy I promise!!!!

There is some amazing music out there

Today I was Youtubing some of my favorite songs from musicals and I stumbled upon the Schindler's List theme. It's one of my favorite compostitions of all time. It's so very sad but the music is so moving and beautiful to me that everytime I pop the CD in I listin to this song over and over again for an hour or so.

Itzhak Perlman is just so amazing and I had no idea until I watched the short interview before the song that John Williams composed it as well as Fiddler on the Roof another amazing composition.

I truely think that some talents are absolute gifts from God. How else would you be able to write something so transforming.

I like it cold with at fan so I won't have any mid night sweat wakups plus I like to bundle myself in blanket, and Mike likes it warm with some blanket and lots of pillows. I sleep flat on my back. Mike sleeps everywhich way. I hold still pretty much all night and Mike does gymnastics ( but he rarely wacks me which I like).

Yesterday I dumped out the odds and ends bag to retreave my swim suit. Other things that call that bag home are some winter wear. At bed time we just put the stuff on the floor.

At some point in the night Mikey got cold so he grabbed some apparel off the floor. This morning I woke up to a jammied, blanket bundled Mike with my fire engine red ruffled Gap scarf wrapped around his neck.

Priceless.....but I didn't get a picture:-(

Job Hunting

Last night I was trying to apply and the sites kept kicking me out when I was almost finish. So when I couldn't take it anymore I glared at my computer, brushed my teeth with tears in my eyes, said my prayers and went to bed.

Heavenly Father loves me cause he answered my prayers and I was able to apply for like 10 jobs today:)

Real Simple

realsimple.com is one of my favorite places to visit. It's similar to marthastewart.com but a bit more down to earth.

There's an article right now called 24 nutritious (and tasty) snacks. They're in between meal treats. Some of the ideas sound so good!!!!! Here's just a few: three cups air popped popcorn w/dark chocolate shavings sprinkled over the top, one inch squared hard cheese (gouda) and 4-6 apricot halves, apple slices dipped in 1 tbs. almond butter, low-fat Greek yogurt w/chopped walnuts and honey.

Doesn't that sound so tasty! I'm going to try all 24 over the next several months. I'm so excited about it i also posted it on the Anderson blog:)

MAIL!!

Mail is really exciting when you're in North Carolina all alone. The excitement starts to build all morning until that special time between 2pm and 4pm when the mail man walks up to your box. Or better yet it's a package and he knocks on your door giving you and excuse to open it!!!

The computer Mike ordered came today so we will have something more reliable than our laptop that likes to over heat.

Clean Carpet

Before I tell this story keep in mind that Mike reminds me daily to not spend any money. We have no furniture literally, we sleep on an air matress andour computer sits on the floor.

So he turns to me yesterday and says that we have to agree tomorrow on a vacuum and go buy it. I just kinda stared at him and said okay why? Even though our carpet looks clean we haven't vacuumed since we moved in and he's grosed out.

Out of all the things we don't have and after getting achy knee's and necks from squating on the floor this is what he wants to buy first before I get a job. So we bought one today and I got to watch Mike do the vacuuming. the end.
